What is Kollu?

Kollu, often referred to as horse gram, is a small reddish-brown legume, consumed in South Indian cuisine and commonly used in traditional medicine. It has a characteristic earthy taste and a slightly coarse texture, which becomes soft upon appropriate soaking and cooking. It is primarily consumed in Kerala, Tamil Nadu, Andhra Pradesh, and Karnataka, where it is prepared in dishes like Kollu rasam, Kollu soup, Kollu sundal, or Kollu chutney.

This legume can survive adverse climatic conditions and hence is considered a staple crop of dry regions. Farmers seek to cultivate Kollu for its prime potential as a hardy pulse requiring very little moisture, yet able to flourish with poor soils. For many centuries, its toughness and high calorific value have justified its acceptance as food for human consumption and that of livestock.

Kollu has been historically prepared by soaking overnight to treat its inherent toughness. Now it is boiled, sprouted, or ground into flour for various culinary purposes. The unique flavor of Kollu enjoys a great affinity for spices, herein productively forming a quintessential ingredient in many regional recipes. Although not very common among the other lentil varieties, kollu holds its significance in Indian traditional cooking due to its versatile nature and long-standing cultural importance.
