It is small with tapering fruits, often in clusters of two or three, at a node. They are dark green when immature and red when mature. The Kanthari is very hotter than the normal chilli. The burning sensation in Kanthari is due to a chemical compound called capsaicin. It is considered one of the hottest chillies in the world. The Scoville scale is about 50,000-100,000 SHU. Excess usage can lead to stomach irritation.
Kanthari is a perennial crop that lasts for years. The production of this chilli is very little. Kanthari chammanthi or Chutney is a popular Kerala side dish. It adds extra spiciness to the food. Kanthari make is used in many dishes like meen peera, thoran, buttermilk etc. The pickle made using this is very special.
